Procrastination Recipe: Rice Pudding

Saturday was a rough day. I burned two loaves of bread. I don't know what happened. I guess I just wasn't paying enough attention. So when I got back to the city with my puppysitting charge Nemo, I just really wanted to make something for dessert that would make up for burned bread.

Ingredients:
1, 32oz carton of coconut milk
1/4 cup sugar
1 Tbsp butter
1 Tbsp vanilla
pinch of salt
1 cup rice
1/2 cup raisins (optional)

*I only had basmati rice but I think a shorter grain rice is better, gives you less to chew

 

Melt butter, add rice and let it coat over medium heat. I make this like I make risotto, slowly and constantly stirring. Add one cup of coconut milk at a time, allowing the rice to absorb each cup before adding more. After adding the first cup, stir in sugar, salt, vanilla. Constantly stirring releases the starch in the rice and adds to the creaminess (like in risotto). It can seem like an arduous process but I find it to be relaxing, especially when you're dog sitting and all the dog wants to do is harass your cat who wants nothing more than to nap in her favorite spot on the couch.




The culprit:


Anywho, after it's done (when you taste it and the rice is no longer crunchy), then you can add in raisins or cinnamon or whatever else you might like. I then refrigerate it because I like it cold but that's just personal preference. It's creamy, and delicious and a nice change from cookies and ice cream.

As for these winter shenanigans, Nemo and I are both over it. It's tough being only a foot tall with short legs and not being able to go on walks because people haven't shoveled their sidewalks. And as for me, I'm tired of stressing out about street parking and shoveling out my car. So if Mother Nature could find it in her heart to stop pummeling Boston with feet upon feet of snow, I would greatly appreciate it.
