Procrastination Recipe: White Chocolate Chip Cookies

I did do a lot of writing this week, to be fair. However, there may still have been a little procrastination happening. I'm not apologizing.

I stopped on my way home to pick up unsweetened chocolate for a recipe I'll be making tomorrow and when I got home I realized I had no eggs in the house. But I'd already changed into comfy clothes, there's nearly a foot of snow outside and though I live two blocks from a grocery store there was no way I was going back outside. So, I improvised.


Ingredients:
2 sticks butter, softened
1 1/2 cups sugar
1 tsp vanilla
2 cups flour
3/4 cup cocoa (unsweetened)
1 tsp salt
1 tsp baking soda
1/4 cup oil
a few splashes of milk
1 cup white chocolate chips





Directions:
Cream butter, sugar and vanilla. Then add in oil. In a small bowl combine flour, cocoa, salt and baking soda. Incrementally add flour mixture to butter mixture until well blended. Add in a few splashes of milk if dough seems too dry, as it was in my case (truthfully, I never really measure things exactly so I may have put too much flour in).



Mix in white chocolate chips and spoon onto baking sheet. Bake at 350 degrees for 8-10 minutes and enjoy!
