Procrastination Recipe: Sick Day Soup

The past few days, feeling unwell, all I wanted was soup. But not canned soup. I craved a really hearty, healthy soup. So tonight I decided to finally make it. My body needed it. And while I still feel like poop my tummy is full.



Ingredients:
1/2 stick butter
1 yellow/white onion
3 medium potatoes, peeled and diced
bag of riced cauliflower
handful of mushrooms, diced
3 cloves of garlic, smashed or chopped
32 oz. veg stock
1 cup water
1/5 cup shredded carrot
1/5 cup kale (I used frozen)

In a large pot melt butter over medium heat, add onion. When onion starts to become translucent add the potato and garlic. I let this cook for about five minutes stirring every minute or so and then added the riced cauliflower. I was originally going to add rice, trying to channel chicken and rice soup. But I don't eat chicken and then when I was shopping I saw the riced cauliflower and thought, rice is great and all but cauliflower is healthier. So you could use either, depending upon your preference. I was trying to make this soup as healthy as possible so that maybe my body will start to get better, fingers crossed.
Add mushrooms and if it starts to look like things are sticking go ahead and drizzle a little olive oil in and stir. When the mushrooms start to turn brown, add salt and pepper to taste. I also added in this BVI Caribbean Seasoning that I got in St. John. Whatever seasonings you like, add it. Add veggie stock and water, carrot and kale and simmer over low heat until the potato is soft. 
And then because whatever I have isn't a stomach virus and I was starting to feel really hungry, I sauteed up some shrimp and drizzled a little Buffalo hot sauce. You can personalize eat bowl as you or your family enjoy it. Add some leftover chicken or fish or shredded cheese. Make it yours.
