Procrastination Recipe: Gluten-free Banana Bread with Coconut and Chocolate Chips

I was recently at Trader Joe's and bought pancake/waffle mix because it was gluten-free. Except, I hate pancakes. So I'm not exactly sure why I bought it. But I had 4 bananas browning and needed to do something with them, so I decided to repurpose the pancake mix. I also had unsweetened coconut shavings (also from Trader Joe's) so this became an everything but the kitchen sink dish.


Ingredients:
1 box Trader Joe's Gluten-free Pancake & Waffle Mix
4 ripe bananas, mashed
1 cup Trader Joe's unsweetened coconut shavings
1 stick unsalted butter, melted
1/4 cup vegetable oil
1/2 cup chocolate chips (I went with mini)

So I mashed the bananas first, then added in half of the pancake mix. I folded it together until blended then added in the butter and the remainder of the mix. After this it's like a cookie dough consistency so I added the oil to thin it out slightly. Then I stirred in the coconut and chocolate chips and spread into a greased baking dish. I baked it at 325 for about 35 minutes, until I could stick a fork in and it came out clean. I should mention this is not super sweet. If you prefer sweeter breads then I suggest adding a half cup of sugar, but I kind of like the fact that it's just naturally sweet from the bananas and chocolate. I had a piece this morning with my coffee and it was perfect.
