Something Sweet Without Wheat

On my way home from Porchlandia on Saturday I remembered I had planned to stop into Something Sweet Without Wheat in Arlington. There was a parking spot right out front, as if the universe knew I needed gluten free treats badly. I tried not to go crazy, but everything looked so delicious. I ended up buying a bag of frozen pizza dough, a loaf of molasses bread (still to be tasted), and a red velvet and a pumpkin (HEYO!) whoopie pies. Because I had to.

I tasted the red velvet (just two nibbles) whoopie pie when I got home and it was decadent. I can't wait to dig into the pumpkin one! Then I set out the pizza dough to defrost. Both molasses loaf and pizza dough are not only gluten free but also dairy free, so for anyone with a lactose intolerance this store is a must.

Also, the list of items you can order from Something Sweet Without Wheat made me giddy. Stuffing! Pies! Pumpkin bread! Oh, and I noticed sub rolls in the freezer! Here I thought Focaccia was forever gone from my life, but huzzah it isn't! Anywho, I defrosted the pizza dough. I divided it in two (I'm saving the second half for a breakfast pizza), drizzled a little olive oil on it and pressed it out on a baking sheet. Then I baked it at 350 degrees for about ten minutes, until the dough was no longer wet.

Then I tossed on some chunks of mozzarella and slices of a tomato and a little salt and pepper and stuck it back in the oven for another 7 or so minutes until the mozzarella was melted. Meanwhile, I sauteed some kale and some portobello slices, because why not up the health factor?

I'm a big user of BBQ sauce because it adds a nice tang and considering how bland my other ingredients were it added a nice depth of flavor. The consistency of the pizza dough was different from the kind of dough you'd buy in the grocery store, a bit more dense. But it was still delicious.

It was difficult to eat however, because Princess Bug has been incredibly clingy post-surgery and kept trying to crawl into my lap. Not that I'm complaining. I love when she wants to snuggle, just as long as my food isn't nearby.

And now I will delve back into that whoopie pie...

Happy eating!

Update: I've been using the molasses bread to make cinnamon toast in the morning and it's scrumptious and tastes better than regular old wheat bread!
