Procrastination Recipe: Apple French Toast Bake

I was asked to make a french toast bake for a bridal shower that happened this past weekend. I hadn't made this french toast recipe in years, but somehow it had stuck in my old roommate's mind. This is a really easy recipe and you can make it the night before, cutting out any morning of stress.
(This makes 2 casserole dishes' worth.)

Ingredients:
8 apples, peeled and cored
2 sticks unsalted butter
1 cup brown sugar
2 loafs good quality bread (I used Challah), sliced an inch thick
8 eggs
2 cups milk
Cinnamon

In a pan melt butter and add brown sugar. Cook over medium heat until it bubbles.


While the butter/sugar is cooking, slice the apples and sprinkle generously with cinnamon.




Spread the brown sugar/butter into the bottom of your casserole dishes.


Lay the apples in a single layer on top of the brown sugar.


Cover with your bread slices.


Beat your eggs, add milk and sprinkle a couple teaspoons of cinnamon. Combine and then spoon over the bread. Make sure that every inch of the bread gets covered with the egg/milk mixture.


Cover and set in the fridge overnight. In the morning, bake for 40 minutes (until bread begins to brown) at 350 degrees and serve hot. Sadly, I didn't take an after pic because I was racing to get to the shower, but trust me, it was the hit of the breakfast spread.
