Procrastination Recipe: Veggie Pizza

I had another long weekend of puppysitting Nemo combined with a massive snow storm. I've forgotten what Boston looks like without snow. I'm usually a Winter baby but this year I've had no desire to go snowboarding. I just want to spend every day wrapped up in blankets on my couch binge-watching tv. 

But I'm always raring to cook or bake something so I decided to treat myself to pizza on Friday night. I grabbed a bag of premade dough at the grocery store, cut it into six pieces, rolled them out and grilled them. Then I piled on some of my favorite foods.




Ingredients (for two small pizzas):
Half an onion
a handful of baby bella mushrooms
3 small peppers (those are not spicy peppers but you can use whatever you like)
a handful of baby spinach
a handful of cherry tomatoes

Saute the veggies in a tablespoon or two of olive oil until the onions are soft and translucent.

 

In a grill pan, grill both sides of the pizza, add cheese (I went with chipotle cheddar) and BBQ sauce (Sweet Baby Ray's, come on), until cheese melts. Then add veggies on top.

 

Because I have a tendency to go overboard, I also fried up an egg and put that over top of the veggies. Because, why not? 


If I'm going to be snowed in then I'm going to make the most of it, so I also made red velvet cupcakes over the weekend. And proceeded to eat most of them. No apologies. I'll get to the gym again when the snow melts in a month.
