Procrastination Recipe: Gram's Scrambled Eggs

So you're having your friends over for a special brunch. Maybe it's an engagement party or family gathering and you want it to be elegant, delicious - something that could have stepped off the plates of Martha Stewart Living. I promise you, these eggs may present simply, but they are absolutely scumptious. And they won't stress you out because they are quick and easy to make.

Ingredients:
1 dozen eggs
1 package goat cheese
chives

Lightly beat the eggs with a fork while the pan heats up. The key is to have them all combined before they start to cook. Spray your skillet with PAM and then pour the eggs in. Cook on medium heat while constantly moving the eggs around with a spatula. Add the goat cheese in small chunks so it can easily melt and blend. Add salt and pepper to your preference and serve with chives sprinkled on top for garnish.
