Procrastination Recipe: Flourless Chocolate Cake with Chocolate Ganache and Strawberry Sauce

So... I hope you like chocolate, otherwise you might as well skip this post.
New Year's Eve is when I cook a boatload of food for friends. So over the next few days I will be posting the recipes of what I cooked. Today we start with dessert. Why not?

Chocolate Flourless Cake is a rich, dense dessert. Almost like fudge.



I decided to up the ante by topping it with chocolate ganache and strawberry sauce. It's actually quite easy, but a little time consuming. However, it is so worth it.







Cake Ingredients:
1/2 cup water
1/4 tsp salt
3/4 cup white sugar
16 oz unsweetened chocolate
1 small bag dark chocolate chips
1 cup unsalted butter, softened
6 eggs
1 Tbsp baking cocoa

Directions:
Preheat oven to 300 degree and grease a 10 inch cake pan. Sprinkle in baking cocoa and coat until grease (I used Pam spray) is covered with cocoa. (Note: I used a spring form pan so that I wouldn't have to dig to get the cake out come serving time. However, I forgot to wrap it in tinfoil first and nearly cried when I pulled the cake out of the oven and realized water from the water bath had seeped in. Be smarter than I was, make sure your pan is air/water tight.)

In a small saucepan heat water, salt and sugar until dissolved. Set aside.

In a microwave safe bowl melt all chocolate at 25 second intervals, stirring between, until completely melted. Mix in butter until completely combined. It will look super shiny and you'll probably want to bathe in it. Resist the urge. Mix in the sugar-water. Slowly mix in eggs, one at a time.




Pour batter into prepared pan and place into a larger pan. Add water to larger pan until about halfway up the cake pan side (this is called a water bath). This helps the cake cook evenly. Place in oven and bake for 45 minutes.

And this is when it came out and I saw the water around the rim and nearly cried. Lots of deep breaths and blotting with a paper towel followed...

                                           

The cake will come out looking uncooked. That's expected. Cool cake overnight.

Chocolate Ganache Ingredients:
One package dark chocolate chips
3/4 cup Light Cream
1 tsp Vanilla

Directions:
In a saucepan over low heat melt chocolate and add cream and vanilla. Stir until completely combined (about ten minutes). Remove from heat. After the cake came out of the oven I spread the ganache over it, covered it loosely in tinfoil and set it aside to cool overnight.



Strawberry Sauce:
Small carton of strawberries
1/4 cup sugar
Juice of 1 lemon


Directions:
Rinse and cut up strawberries. Combine with lemon juice and sugar in saucepan and cook for 20 minutes over low heat. Remove from heat and pour into blender or food processor. Pulse until you get the desired level of sauce, pulse less if you prefer it to be chunkier.

  1. This cake was beyond decadent! A true treat as my first bite of 2014. Though you were freaking out about the water, you hid it quite well and just focused your energy on blotting. No one would ever know, the end result was fantastic.
