Procrastination Recipe: Shepherd's Pie

I thought for sure I'd already blogged this recipe but apparently not. My apologies!


Shepherd's Pie is one of my favorite comfort foods but as I no longer eat meat I thought for years that it was completely off the menu. And then one day a couple years ago I thought, wait, I can totally make this still! And honestly, it's not missing the meat at all, I promise you.

Ingredients:
About ten small potatoes
3 Tablespoons butter
EVOO
Salt & Pepper
1 package baby bella mushrooms
1 bag frozen peas
1 bag frozen corn
1 package Beef-less ground beef
1/3 Parmesan cheese
1/2 cup cream cheese (I used garlic and chive)
Optional: Shredded cheese for topping; I used truffle cheese, just because

So I cleaned the potatoes and peeled off maybe half of the skin on each potato. I like having skins in my mashed potatoes but if you don't then by all means peels them completely. Then I boiled them until soft in salted water.


I mashed them with cream cheese and fresh Parmesan (I was low on butter, but that's perfectly acceptable to use), then I set this aside.




In my saute pan I melted the butter with a drizzle of EVOO and cooked the mushrooms



Then I removed the mushrooms but tried to keep as much of the liquid in the pan as possible. I added another drizzle of EVOO and then added in the beef-less ground beef. It crumbles just like ground beef but it isn't super flavorful so I sprinkled in some garlic powder and cumin.



In a casserole pan, layer the mushrooms and ground non-meat, then whatever other veggies you'd like. I went with peas and roasted corn, but you could certainly saute carrots and add them or zucchini. Really whatever you like.


Then I spread the mashed potatoes on top and then just to be really ridiculous I cut up the cheddar WITH TRUFFLES and layered that on top. I might be gluten intolerant but I am not allergic to dairy so bring on the cheese!



I baked this for about fifteen minutes at 350 just until the cheese melted. I will not be eating this for every meal for probably the next week. #perksoflivingalong 

So the lesson is, just because you don't eat meat or gluten you can still have delicious comforting meals. And what's better on a freezing cold night than having something hearty to chow down on?

  1. This looks awesome! I couldn't tell from your Instagram pic that there was faux meat in there. Love the idea of the chive cream cheese - brilliant! There is no tastier cheese than the Trader Joe's truffle cheddar.

  2. YUMMMMMMYYYY. i need to get better at making dishes like this- especially when there is a family party situation and i am the only vegetarian! i will be bookmarking this one :)
