Procrastination Recipe: Gram's Coffee Cake


So KISSING FROGS is now available in paperback and ebook on Amazon. In honor of that, and because of how prominent brunch is in the book, I thought I would share some recipes with you over the next few days.

Brunch. What can I say about brunch? I adore it. I love waking up and having eggy-anything. And cake for breakfast? You don't have to ask me twice.



So let's start with my favorite coffee cake. Actually, it's the only coffee cake I've ever made because it was so good the first time that I just never went looking for another recipe. And what's great about this recipe is that it can be made the night before (if you're hosting and have a lot of items you'll be serving it helps to make some things in advance).



Ingredients:
1 cup unsalted butter
2 cups white sugar
2 eggs
1 cup sour cream
1/2 tsp vanilla
2 cups flour
1 tsp baking powder
1/4 tsp salt

1/2 cup brown sugar
1 Tbs cinnamon (this is really personal preference, use whatever amount you're comfortable with)


 

Cream the butter, sugar, vanilla and eggs. And then add in the sour cream. This is what makes the coffee cake light and creamy. And so, so good.


 

Meanwhile, you need to grease and flour your bundt cake pan. Mine was a beautiful gift from my aunt, but with all the nooks and crannies cakes often get stuck in it, so I suggest buying a smooth bundt pan.

You want to spoon half of the batter into the bundt pan and smooth it up the sides and middle.

 

Then you want to add the cinnamon-brown sugar. Sprinkle about half onto the batter.

 

Then add the rest of the batter and sprinkle the remainder of brown sugar on top. Bake at 350 degrees for an hour, or until a toothpick comes out clean.



Let the cake cool completely before removing it from the pan. Run a dull knife along the edges to loosen it. Cut right before serving.

  1. This coffee cake was insanely delicious! And it was good on day 2 and day 3! That pan however, was very hard to clean!!
