Procrastination Recipe: Banana Bread

I'm not actually procrastinating. Editing is going well, in fact. But I had bananas starting to become overripe and a friend who had requested another loaf of my banana bread so I stayed up way past my bedtime baking last night. Oh, and it was 90 degrees and humid yesterday. Brilliant decision on my part.

So here's something you should know... I don't like bananas. I have no problem putting them in smoothies where they disappear, but eating one plain makes me gag. They have such a weird consistency. And once they get a brown spot I feel queasy. But oddly, mashing them and putting them in bread I have no problem with. 

Ingredients:
3-4 bananas, mashed
2 cups flour
3/4 brown sugar
1/2 cup butter
2 eggs
1 tsp baking soda
1/4 tsp salt


Combine wet ingredients in one bowl and the dry ingredients in another. Then gradually mix the dry into the wet. You can bake it in one bread tin or four small ones. Since I don't like banana bread I went with mini tins so I can gift them. Make sure to spray the tins with Pam before putting the dough in so they come out easily. Bake them at 350 degrees for about 50 minutes, or until you can stick a fork in and pull it out clean.
