Procrastination Recipe: Mollie Cookies

First, I must apologize for the quality of these pictures lately. My kitchen light went out, oh, probably three weeks ago. And I have yet to replace the bulb. As such, the light that the hood gives off is very yellow so all of my food picks are a bit wonky.

So last night I walked home in a really fun snow storm (not fun at all, in fact, poor jacket wearing on my part - it's like I'm pretending it's not actually winter here). Once I got home I was not going back out and when I decided to bake cookies I only had one egg left so I improvised.

Ingredients (as the real recipe calls for):

1/2 cup softened butter
1 cup white sugar
2 eggs
1 1/2 cups whole wheat flour
1/2 tsp sea salt
1 tsp vanilla

Directions:
Cream butter, sugar, vanilla and eggs. Since I only had one egg I also used a 1/4 cup veg oil. It seemed to do the trick just fine.




Combine flour and salt and incrementally add to butter/sugar mixture until blended. 


Scoop onto baking sheet, leaving about an inch or two between and bake at 350 degrees for 10-12 minutes.


I realize not everyone is going to love this recipe as much as I do. It's a recipe my mother made when I was little and I have always loved whole wheat flour, which has a different taste from white flour, and salt. If you're looking for a sugary cookie this probably isn't for you. I could eat a dozen of them, easily.
