Procrastination Recipe: Twice Baked Sweet Potatoes

Your probably thinking that: A. I'm editing like crazy or B. not baking/cooking/jamming because of my lack of recipe posts of late. You'd be wrong on both accounts. I do have my computer returned to me but it's acting a bit wonky and I haven't been editing as much as I should. I did write until midnight Friday (super exciting Friday night, I know) and did a little editing Sunday. However, Saturday I had intended to spend the afternoon writing but my sister's cat had to unexpectedly be put down so obviously I dropped everything and drove home to be with her (which included stuffing her full of homemade clam pizza because food is how I show my love). But fear not, I have a quick Fall recipe for you from a few weeks back. I've made it again since then (that was the week my computer died) because I love sweet potatoes so much and they are really good for you. When I made it at Kaitlin's I also baked two fillets of Cod with diced onion, garlic, a yellow squash, a zucchini, salt, pepper and olive oil. It was a healthy, super-delicious meal. And made me forget that darn computer for a hot minute.

Anywho, back to the editing/writing regimen starting tonight.
